La Sauvageonne - Vin De Pays D'Oc 2001
"A Bordeaux blend with a difference, to accompany rich
and hearty food; decanting advisable. This wine can be cellared

A blend of Merlot, Cabernet Sauvignon, and Cabernet Franc from
a terroir schist. Selected parcels of low yielding wines are aged
in oak from 12 - 18 months.
The Vintage: A great year with a warm and dry
ripening period, slight wind with absolutely no problems of disease.
A truly perfect year for Bordelais varieties (Merlot, Cabernet etc).
The Merlot was picked in late September and both Cabernets the second
week in October, all varieties reaching full phenolic ripeness.

Varietals: 85% Merlot, 10%
Cabernet Sauvignon, 5% Cabernet Franc.
Yield: 20-25 hl/ha.
Terroir: Grit / Schist.
Harvest / Vines: Green harvest,
leaf pulled, harvested by hand.
Wine making: De-stemmed,
cold soak (3days), daily pigeage (cap punching), four weeks
on skins, malolactic in barrel.
Ageing: 100% Oak (15% new).

Tasting Note: An intense deep ruby red;
powerful with morello cherry, mocha and spicy aromas; concentrated
and generous with jammy fruit, a big volume of ripe tannins
and a smoky finish.
