Medium ruby/dark cherry with mocha & spice, rich and creamy with great depth and texture.

The Vintage: A great year with a warm and dry ripening period, slight wind with absolutely no problems of disease. A truly perfect year for Bordelais varieties (Merlot, Cabernet etc). The Merlot was picked in late September and both Cabernets the second week in October, all varieties reaching full phenolic ripeness.
Tasting Note: A warm vintage for the Bordelais varieties with hot day time temperatures & cool nights; giving excellent ripeness, texture and good aromatics. The Merlot was picked on the 14th of September and the Cabernets between the 5th & 15th of October.
Grape Varieties: 70% Merlot, 20% Cabernet Franc, 10% Cabernet Sauvignon
Yield: 18-25 hl /ha
Alcohol: 14%
Terrior: Schist
Harvest/Vines: Green harvest, leaf pulled, harvested by hand.
Wine Making: De-stemmed, cold soak (2 days), a long and cool ferment for the Merlot followed by a short maceration. A warm & short ferment for the Cabernets, three weeks on skins and malolactic in barrel.
Aging method: 80% oak (15%new)
